Kanista, Pouteria campechiana, is a medium to large sized Central American species that is commonly called the Eggfruit tree since the fruit somewhat resembles an egg. When this fruit is made into a drink, the color is a yellowish color that resembles an egg yolk. Eggfruit is high in vitamin A and beta carotene which strengthens the human immune system and protects against vision loss. The hardwood from this species is dense and occasionally produces beautiful burls. Burls have wild, irregular grain with eyes and figured patterns throughout.
