Originating in Europe, Olive (Oleo Europa) is available in thick slabs cut from large trunks in its native country of Europe. Root stock was successfully transplanted to California in the late 1800′s and early 1900′s. Orchard trees in California have been cultivated into shorter and more shrubby trees to ease mechanical harvesting of Olives, which does not allow for the production of larger trunks as in European Olive. As a result, the California variety produces incredible figure and crotch wood. The down side is that orchard trees generally have more reaction wood in them and consequently dry with substantial movement and checking if not properly cared for. We recommend the Italian lumber for furniture and the Californian for fine turned articles and small projects.
