The Carob tree produces false chocolate that is used in energy bars and health food snacks.  Carob has vivid pinks and reds and can sometimes be confused with tulip rosewood.  The wood is nice to turn and it takes a nice polish.  It is scarce on the market because it is more valuable for the farmers standing and producing.  Small sizes are typically all that is ever available.
